Rhubarb Tiramisu Parfait
I created this very delicious rhubarb tiramisu with fresh rhubarbs from my grandmother's
garden. I sweetend it with some rose sugar, which made the whole thing a very delicate combination!
Recipe:
Makes 2 Parfaits
250g Rhubarbs
2 tablespoons of rose sugar
50g sugar
60g ladyfingers
For the mascarpone cream:
200g mascarpone
50g yogurt
40g sugar
1 tablespoon of rose- or vanilla sugar
1tablespoon of lemon juice
Put the rhubarbs and the sugar in a pan. Let them simmer till they are soft. Put the mixture aside and let it cool down. Baste the ladyfingers with the liquid from the rhubarbs.
Mix all the ingredients for the mascarpone cream until they get smooth. Arrange half of the ladyfingers at the bottom of the jars. Spread half of the mascarpone mixture over the ladyfingers. And then put half of the rhubarbs on top. Repeat the layers and sprinkle with some rose sugar. Put the jars in the fridge and enjoy!
