Pumpkin soup with kale chips

I'd love to share my mother's pumpkin soup recipe with you! It's super delicious and the perfect appetizer. The kale chips add some nice crispness to it. You really have to try it!


Pumpkin soup:
- 1 pumpkin (about 1kg)
- 2 carrots
- 2 patatoes
- 1 parsnip
- 1 glove of garlic
- 2dl of vegetable stock
- some fresh or ground ginger
- onion powder
- some salt and pepper


Cook all the vegetables in a steamer. Then add the garlic, vegetable stock, ginger, onion powder, and pepper and mix until smooth. Add some water if the consistency is not right yet. To make it complete add some sour cream and kale chips.



Kale chips:

- as much kale as you like (I used green and purple kale)
- olive oil or some other plant oil 
- spices (I used salt, pepper, ginger and onion powder)

Mix everything together and massage the kale with the spices. Heat the oven to 120°C and let the kale in the oven for about 15 min or until the pieces are crispy. Don't let it in the oven for too long, it will get black and burnt very soon.
