Traditional balinese curry paste


During my last holiday in Bali I discovered a lot of new food and flavours. Besides Jackfruit and some other delicious meals I also tried a homemade Balinese curry.


I attended a Balinese cooking class and learned how to make a traditional curry paste. I changed the recipe a little and wrote down a recipe for you.








You'll need:

- about 10 cm of galangal
- 2 pieces of turmeric (about 5 cm)
- about 10 cm of fresh ginger
- 7 picecs of shallots
- 7 cloves of garlic
- 1/2 teaspoon of salt
- 1/4 teaspoon of coriander powder
- 1/2 tespoon of black pepper
- 1/2 teaspoon of white pepper
- 3 pieces of cloves
- 3 pieces of candlenuts (can  be substituted by nutmeg)
- 1/4 teaspoons of cumin
- 1/4 teaspoons of grounded nutmeg
- 1/2 teaspoons of sesame seeds










Cut all of the above ingredients except the hard spices. Put all the ingredients into a food processor and mix until you reach the consitency pictured above. You can either store it in the fridge like that (up to four weeks). Or fry it in some coconut oil for 5 minutes. Your curry paste is now ready to use!
