Rhubarb Strawberry Jam


It's finally that time of the year where we can enjoy strawberries and rhubarbs at the same time. Last year I created a rhubarb crumble. You can find the recipe here.


As I love both of them I though it is time to combine these flavours again. I created a strawberry rhubarb jam, this way you can enjoy this flavour combination all year long.


In this recipe you can easily switch fresh for frozen fruits. They are mostly cheaper but need to be defrosted first.


Recipe:

- 300 g of rhubarb
- 150 g of strawberry
- 1/2 teasp. of vanilla powder
- 0.25 dl of water
- 200 g of jam sugar (2:1)

Cut the rhubarbs and strawberries into small pieces. Put the rhubarbs, strawberries and vanilla powder in a pan and let them simmer until the rhubarb is soft. Then add the jam sugar and let it cook for 3-4 minutes. Pour it into hot bottles and put a lid on top. Hope you enjoy!
