apple cake with pumpkin seed crumble

It's getting colder outside, at least here in Switzerland. So I thought it's time to share this warming apple cake recipe with you.

This time I added some pumpkin seeds to the crumble, to give it that nice green color. But you could also just do it without them.

The cake is topped with some extra apples to make it even yummier! Also with all the spices it smells a little like Christmas and is the perfect fall dessert.

Recipe:

- 200 g flour
- 100 g sugar
- 1/4 teasp. vanilla powder
- 1 teasp. cinnamon powder
- 1/2 teasp. baking powder
- 1 teasp. baking soda
- 60 g of soft butter
- 180 g of vanilla yoghurt
- 2 eggs
- 1 dl coconut milk
- 1 apple, cut in small pieces
- 2-3 apples, cut in slices

Crumble:

- 15 g finely chopped pumpkin seeds
- 10 g sugar
- 10 g oats
- 20 g soft butter
- 5-10 g flour

Mix the dry ingredients in a big bowl. Add all the other ingredients, excpect the sliced apples. Stir until you have a nice batter. Pour the batter into a baking pan. And top it with the sliced apples. Finally prepare the crumble and sprinkle it over the cake. Bake in the oven for about 35 min at 180°C.
