Mini Easter Nest Cupcakes
In need for an easy Easter bake that is simple, quick and still looks amazing? How about these mini Easter nest cupcakes. The perfect bite of deliciousness topped with candy eggs. Recipe (enough for about 15 mini cupcakes) - 60 g soft butter or margarine - 60 g sugar - 60 g flour - 1 egg - 1 teasp. of baking powder Buttercream: - 150 g soft butter - 30 g powder sugar - food coloring - candy eggs Add all the dry ingredients into a bowl. Then add the butter and egg. Mix everything well and pour the dough in the cupcake moulds. Bake in the oven at 180°C for about 8-10 minutes or until a wooden stick comes out clean. Let them cool down. Beat the soft butter untill fluffy. Then add the sugar and food coloring. Continue mixing until you get a nice homogenous mass. Pipe little buttercream nests on top of each cupcake. And add 3 candy eggs per nest. Enjoy!
